sunday | gumbo with rice and baked cole slaw
poppi and tanny are visiting and we love to cook together. i prepared gumbo and poppi (my father) prepared baked cole slaw. i've used paula deen's gumbo recipe for years now and i love it. i use vegetable stock instead of beef. and i totally forgot to purchase celery so i added a yellow pepper in it's place this time (so one green pepper and one yellow pepper).
baked cole slaw
2 tbsp butter
8 oz cole slaw mix
3/4 c cole slaw dressing
1 1/4 c cheddar and monterey jack cheese
1/4 tsp salt
1/4 tsp pepper
3/4 c panko bread crumbs
preheat oven to 400 degrees. cut butter into pieces; place in bowl to soften. combine slaw, dressing 1c of cheese, s&p then transfer to greased 2qt baking dish. mix bread crumbs and remaining 1/4c of cheese into butter with fingers until blended; spread over cole slaw. bake 15-20 min until golden and bubbly. let stand for 5min then serve. 4 servings. he doubled the recipe for the family.
monday | chicken spaghetti with green salad
ree drummond's chicken spaghetti recipe. my variation... i use skinless boneless chicken breast and instead of pimentos, i use a red pepper chopped.
tuesday | roasted vegetables with brown rice
butternut squash, parsnips, onions, red potatoes and asparagus. spice up the brown rice with vegetable broth (better than bouillon) and a little curry.
wednesday | tomato pesto pork tenderloin medallions with brussels sprouts and roasted potatoes
my father's recipe. pork tenderloins, tomato pesto and cheese. saute tenderloin medallions until brown on both sides. place in baking dish. top with tomato pesto then top with cheese (your choice of cheese). i prefer goat cheese. bake in oven until cheese melts and bubbles. serve warm.
thursday | julia child's beef bourguignon
my oldest daughter has been begging me to make this recipe for what seems like forever. actually since we watched julie and julia together. so i'm attempting it this thursday. she will be my helper! julia child's famous beef bourguignon. voila!

saturday | tom kha soup
the recipe. i plan to use firm tofu instead of chicken. i miss som chai and richard's tom kha soup and pad thai so much. this is my 1st attempt to make tom kha soup. fiingers crossed. i'm totally craving the soup. the aroma of the yummy lemon grass with thai basil in coconut milk... it is so dang yummy.
