life has been hectic. the planned menu from last week shifted quite a bit. but here's the thing, you have to be flexible and make adjustments when necessary.
my grandfather is slowly fading and will no longer be here. this past week, i've traveled to see him as often as i can afford away from home. it was great to have the weekly menu in place and i'm thankful that i went grocery shopping over the weekend so most of the meals i had planned were still a success. however, the evennings i was not home my husband implemented easy dinners that he could manage.
and oh my goodness, how i love my crockpot. isn't it amazing? you throw everything into the pot in the morning and hours later walk through the door to find your mouth watering with anticipation. yum. love easy meals.
sunday | baked talipa, brown rice with quinoa and sweet corn-on-the-cob
monday | new york strip steak, baked sweet potato with roasted garlic and green peas
tuesday | pork tenderloin with carmelized onions and garlic, baby carrots and brown rice (crockpot)
wednesday | green and red salad topped with grilled chicken
thursday | seared salmon served over a medley of steamed veggies
friday | naan pizzas
saturday | chicken country captain by alex hitz
