monday - ham and cheese souffle
monday is crazy so something quick and easy works best. my crockpot is full with leftover corned beef and cabbage so i have another option... leftovers if i'm exhausted.
tuesday - eggplant parmesan with green salad
slice eggplant into 1/2" slices. layer onto baking sheet lined with paper towels and sprinkle with kosher salt. the salt pulls the moisture from the eggplant. dip into egg wash and then bread crumbs. heat pan with peanut oil, fry until golden on each side, drain on paper towels. layer in 9x13 pan. layers... tomato sauce (add roasted garlic - so yummy!), eggplant, sauce and top with cheese. mozzarella and parmesan are my favs. bake in 350 degree oven for 30 to 45 minutes (depends on how deep your layers are). serve with a yummy salad, more roasted garlic and crusty italian bread.
wednesday - tortilla soup
i add shredded chicken breast and sweet white corn to my soup.
thursday - grilled flank steak, roasted red potatoes with spinach salad
the flank steak is best when marinated for at least a day.
my marinade... soy sauce, fresh ginger, garlic, brown sugar, ground cloves, black pepper.
friday - out to dinner!
saturday - mirin glazed salmon, brown rice with brussels sprouts
